Remove the shells for the pans. Drain the pureed peach using a strainer and place strained puree in a clean mixing bowl.

Let simmer for 15 - 20 minutes until the peaches are soft. Taste the juices and adjust your spice, sugar and butter if necessary. STEP 2: While your peach filling simmers, follow the Mini Tart Shells package directions for par-baked shells. Line your baking sheets with foil to minimize clean-up at the end. (Jackie hates washing dishes!)

Repeat with second sheet of pastry. Place on prepared sheet pans. Use a pastry brush to brush edges of each rectangle with egg wash. Fold edges inward. Lightly press to seal. Brush tops of dough with egg wash. Layer peach slices in center of each pastry. Bake for 20-23 minutes, or until puffed and golden brown.
